Champions of brunch, Public CBD, have continued to expand their innovative and extensive breakfast options with the introduction of two new waffles; one savory and one sweet.
The savoury waffle comes piled high with tender cotechino sausage, Willunga bacon, a fried egg and outrageously good maple butter, while the sweet waffle is covered with delicacies like caramelised bananas and cinnamon ice-cream, slathered in oozing salted caramel and sprinkled with popcorn.
Being contributing members of society, The Adelaidian took Public up on their generous offer to let us taste these new waffles, solely for the purpose of being able to report back to you, the good people of Adelaide, if these waffles taste as good as they look.
We started with savoury first (because we don’t like to upset the nature of the food world where dessert generally comes last), and were honestly blown away by how good this dish tasted. The waffles were soft but dense, providing a solid base to hold up the other items on the plate. The cotechino sausage and bacon was perfectly cooked, adding some salty meatiness that was surprisingly complimented by the sweetness of the maple butter that coated the dish. It’s not really a savoury breakfast dish if there’s no egg option, so the fried egg perfectly topped off this tantilising brunch experience.
But you like to start your day with a breakfast as sweet as you? We hear that! If you’re all about opulent desserts and have a sweet tooth to rival Augustus Gloop, the sweet waffles are calling you. Every element of this dish is more decadent than the last, from the contrasting crunchiness of the toffee against the soft banana, the creamy cinnamon ice-cream cutting through the oozing caramel sauce, and the chewy popcorn mashing together with the foundation waffle.
