As the weather cools down, heat up at Republic with their new Winter Warmers Menu full of hearty dishes and heavy meats. Featuring dishes like Berkshire Free Range Pork Belly and Saltbush Lamb Rump, these treats are sure to get your protein intake up and keep you full and satisfied, ready to crawl under a fluffy blanket.
The space itself is cosy, with soft couches and plump cushions in corners, ready to be nestled up in. The wooden tabletops give Republic a homey feel, but the food is anything but.
Head Chef Daniel Serafin has put together fresh new menu where loads of rotisseried and charcoaled meat come together with lighter options like seafood pasta and haloumi salad.
“At Republic our aim is to ensure our offerings cater to the variety of people that walk through the doors. We want to ensure each and every customer leave with a tummy full of nourishing food, whether that be a chargrilled porterhouse or healthy salad.” says Serafin.
Keep an eye on the specials board too, where you might find gorgeously colourful dishes like the Seafood Platter, full of fresh seafood like blue swimmer crab, king prawns, oysters, pickled octopus and scallops, as well as crumbed and fried goodies like battered flathead, crumbed prawns and fat, crunchy chips.
Coming up at Republic is the perfect winter event; a Rotisserie and Beer dinner where three courses of slow roasted and charcoaled meats are being paired with ales from Stone and Wood and Pirate Life. Sounds like the perfect chilly autumn night to us!
